Pumpkin Spiced Cookies

It’s recipe time! Today I am going to share with you a cookie recipe that I have only just discovered but that I am loving. This is just the perfect autumn treat. I love these little cookies with a big mug of hot chocolate They are just so yummy. So, without further a do, here is my pumpkin spice cookie recipe

What You Will Need:

300g Plain Flour

175g Granulated Sugar

115g Unsalted Butter

1 Large Egg

85g Dark Molasses (Black Treacle)

½ Teaspoon Vanilla Extract

½ Teaspoon Baking Soda

½ Teaspoon Ground Cloves

1 Teaspoon Ground Cinnamon

1 Teaspoon Ground Nutmeg

1 Teaspoon Ground Ginger

A Pinch Of Salt

How To Make:

  1. In a medium mixing bowl combine your dry ingredients Your flour, baking soda, salt, cinnamon, ginger, cloves and nutmeg. Gently whisk them together and set it to the side.

  2. Next, add your butter and sugar to a large mixing bowl.

  3. Now, cream them together until they are light and creamy. This is easiest with an electric mixer, but can be one by hand.

  4. Next, add your egg, vanilla and molasses to this bowl and beat again.

  5. Now you need to add your dry ingredients I suggest doing this a little bit at a time, purely to avoid getting flour everywhere. Stir it all together until it is well combined.

  6. Pull your dough together and split it in half. Wrap both halves in cling-film and put it in the fridge for around 2 hours.

  7. Once chilled, Preheat your oven 190c/375c and line a baking sheet with baking parchment.

  8. Now, lightly flour your surface and rolling pin.

  9. On your surface, roll your dough out. You want it to be about ¼ inch thick.

  10. Once rolled, use a cookie cuter of your desired shape to cut your cookies. If you flour your cutter before using it, it will make it easier to remove your shape. Since I am doing this near Halloween, I have used a little bat shaped cutter.

  11. Place your cookies on your tray, at least 2 inches apart.

  12. Bake your cookies for about 11 minuets, or until they look set. I generally find 11-13 mins best.

  13. Once cooked, remove your cookies from you sheet with a metal spatula and place them on a wire rack to cool.

And that’s it. You can decorate your cookies if you wish, but that I purely a personal choice, you don’t have to. I love these cookies. They are the perfect texture and so tasty.
