Carrot And Ginger Soup Recipe

It is defiantly starting to feel like autumn now. The weather is getting colder, the leaves are starting to turn, pumpkin spice lattes are back….defiantly starting to feel autumnal. So since the nights are starting to draw in, I thought that I would share one of my favourite warming soup recipes with you. Here is my go to carrot and ginger soup recipe.


What you will need:

1 tablespoon of olive oil

1 onion

8 medium carrots

1 tablespoon of purΓ©ed ginger

500ml vegetable stock

200g fat free fromage frais

How To Make:

  1. first dice your onion and your carrots

  2. now, heat the oil in a large saucepan and add the onion. Cook gently for about five minuets, without browning

  3. add the carrots, ginger and stock to the pan

  4. bring to the boil

  5. next, cover your pan and leave it to simmer for twenty minuets, until the carrots are soft

  6. once cooked, remove from the heat and blitz until smooth

  7. return to the stove, season to taste and then gently stir in your fromage frais

  8. serve with crusty bread
